I'm taking Thanksgiving off!

With Thanksgiving a week away, I'll openly admit that I don't have any desire to cook a vegan feast this year.  Every year I'm less enthused - I'm not into holidays as it is, I live alone, and I'm going to my dear friend Michelle's of The Spice Must Flow for a vegan Thanksgiving style potluck soon anyway. 
Blah, Blah.

And I helped teach Try Vegan PDX's Cooking Vegan for the Holidays class last weekend, which was a blast and gave me a chance to break out my obligatory Sweet Potato Pie Casserole and associated jokes for the year.  Chelsea of Flavorvegan was magnificent and I appreciate all her help in talking me through it!  

But as for me on Tday, I'm likely going to settle in with take out and my cats and not cook!  Take that, America.

i wish more than anything that i could get out of cooking a holiday feast. grumble grumble. but i have to go home and if i want to eat anything there, i'm gonna have to make it myself. may as well try to impress the omni's with mah skillz.

You were awesome at the cooking class! It was wonderful to have pecan pie again! Enjoy the break from tday and do something fun for yourself. I recommend checking out the Rhododendron Gardens by Reed College. It is free and is one of my favorite places in Portland!

I'm sort of taking TG off, by getting on a plane. But I think we'll have a tiny harvest feast on Wednesday night anyway. Or I will get taken out to dinner. It IS an annoying holiday (like most of them).

Are you saying never again to the tofurky because you don't like tofurkey, or don't like it marinated in apple cider?!

I love tofurky, and I was going to try marinating mine in sparkling apple cider with garlic and spices, but now I need to know if it's good or not!

I hear ya Jess! Every year I get less into all the holiday madness. Jim & I did Chinese take-out for Thanksgiving this year. It was great! We enjoyed it and had leftovers just like everyone else. We're hosting the Christmas feast this year. I'm now wondering what I've gotten myself into.

We're not cooking a full thanksgiving either--I'm making a couple of things and bringing them to my husband's work so we can eat with the guys who don't have the day off--it should be fun *and* relaxing.

Megan - I'm just not a huge Tofurkey fan. Don't let that stop you or stop you from doing a similar marinade! I have plenty of friends who enjoy Tofurkey.

Oh, I wish I could have come to the class. Now, you deserve the time off after showing everyone else how to cook yummy T-day food...especially Sweet Potato Pie Casserole!

i have been searching online all day to find a good vegan pecan pie recipe...how did yours come out? i was originally wanting to try using silken tofu to replace the eggs but never thought about using flax seeds. any info would be great..i'm desperate!!!

Chelsea - I've made this pie quite a few times now - not only at a cooking class and again this weekend for a potluck - it's tried and true! My next post will actually have another photo of it.

I can relate! I burst out in tears last week as I was walking the dog because Thanksgiving is so stressful. Really? Tears? Yes! The obligatory rounds at everyone's house. What’s for dinner? Turkey! I’ll pass. Oh but you can have the potatoes... Is there butter in them? Yes. No I can't have the potatoes. *Blank stare. Fun!

Besides, I can't get into the overconsumption and waste... Take that America!
