An Italiany Post

A collection of meals with an Italian vibe to them....
or at least tomatoes, or pasta or garlic or all of the above~

Exhibit #1:

Baked Chickpea Cutlet Balls served over fusilli pasta with homemade tomato basil marinara. With sauteed mushrooms and spinach with garlic, and garlic bread.
Carb-attack-amazing.

Exhibit #2
Pesto-Cheezy-Italian pasta bake.

This was made for a PPK Picnic this past weekend, and consisted of a silken tofu ricotta with pesto and chopped, fresh spinach, more tomato basil marinara, some almond ricotta, mini shells pasta, a miso-almond cheezy sauce, orange tomatoes and fresh basil on top.

Exhibits #3 and #4: Homemade pizzas.


The pizza above was marinara sauce, Teese, orange tomato, sweet corn and spinach.

This pizza has cremini mushrooms, orange tomato,pesto and almond ricotta.

Exhibit #5

Leftover pizza from It's a Beautiful Pizza, with tomato sauce, FYH soy cheeze (they're switching to Teese in a couple months, FYI), sundried tomatoes and black olives.

Exhibit #6
Mini grilled teese-basil-tomato on french bread.

Everything looks great, especially the pesto bake (!). That's rad that It's a Beautiful Pizza is switching to Teese. The only pizza I got from them was bland & sad looking. My friend, who's a vegetarian, got dairy cheese on his half. When we opened up the box, he said, "I can't tell which side is mine." I just started laughing.

I'll have to give them another try though!

OMG! That Pasta Bake is orgasmic! I love the idea of almond ricotta. Did you make that from scratch or can you buy almond ricotta somewhere in awesome Portland?

And the miso-cheezy sauce....shit girl...I'm beside myself.

FYI...


the miso cheezy sauce is a basic cheezy sauce that I thickened with ground almonds, pine nuts and a tad of corn starch. nutritional yeast, garlic, olive oil, lemon juice, yellow miso, tamari - same ole : )

the almond ricotta is the cashew ricotta from veganomican - made with almonds.

It's the time of year for basil and tomatoes! This all looks great but I seriously can't get that pasta bake out of my head after trying it last week. Not sure I can make anything edible from your instructions(I'm a novice at vegan creamy stuff) but I will give it a try!
