Raw Zucchini and Green Bell Pepper Noodles..
What I used (everything is eyeballed, so bear with me)
for the noodles:
half a medium sized zucchini, peeled and thinly sliced julienne-style (I should have done thinner, but I was hungry)
quarter of a green bell pepper, cored and thinly sliced julienne-style
for the sauce:
4 medium sized tomatoes - red and orange
quarter of a red bell pepper
sea salt and freshly ground black pepper - to taste
1 large clove of garlic
1 teaspoon olive oil
for the cheez:
2 tablespoons of a cup of raw pine nuts
quarter of a cup of raw cashews
1-2 teaspoons of nutritional yeast
1 tablespoon+ of water
dash sea salt
First I processed the sauce in my food processor and let sit about 30 minutes. Then I sliced the noodles and set aside. Next, I processed the cheez, - first the nuts with just enough water, to achieve my desired consistency, often scraping down the bowl, and then I added the oil, nooch and sea salt.
Lastly, I assemlbed my set up on my plate.
My first simple raw meal was quite refreshing. Sure, I'd like to make the noodles thinner, and ideally, longer, but this was a decent, pretty healthy start. My favorite part was the cheez, of course.

looks really good! i love cashew and pine nuts in these raw "cheese" recipes...they do well sweet and savory, which is awesome.
i have this (probably false) idea that if i get a mandolin to slice pretty noddles and such from raw veggies that i will eat more raw foods...
That is gorgeous. Of course, I'm going on a pine nut kick at the moment, so anything sprinkled with pine nuts just screams "Eat me!" to me these days. Of course, the pretty colors of the zucchini and other vegetables only make it all the more tempting.

Yum that sounds and looks very refreshing. I don't know if I'd have the patience to thinly slice vegetables like that though.
I'm going to have to try this raw cashew and pinenut cheese...it looks yummy. And the dish overall so healthy and fresh.

So pretty and fresh. I have yet to experiment with raw food, but can't wait to start - I just got a dehydrator a few weeks ago. So much to make!

i should get a ginormous zucchini and do this. a coworker just told me about one time when she got a 3-foot long oblong package via greyhound-bus mail from albany, ny. she was so puzzled... then opened it to find an enormous zucchini from her grandmother!! i would definitely be into that kind of mail.
p.s. let's hang when i return from the east. i could use a fresh portland perspective!
