Portabella sandwich dinner

Organic Portabella from the farmer's market, grilled on a sandwich with vegenaise, spinach, sliced tomato and sourdough bread. All organic. On the side is white wine, olive oil and tamari asparagus. The portabella was also briefly marinaded in white wine, balsamic vinegar, olive oil, garlic and tamari.

Crispy Sweet and Sour tofu (+garlic) from Vegan Yum Yum,brown rice and Veganomican test kitchen baby boy choy with crispy shallots. I do adore black sesame seeds.

And for similar meals that I've been eating:

Italian-y marinaded (tamari, olive oil, balsamic vinegar, white wine vinegar, veggie both, garlic, pesto and miso) grilled tofu and portabella slices and roasted red pepper over spinach. Whole wheat penne with fire roasted marinara on the side.

Whole wheat spaghetti with fire roasted marinara, roasted red pepper and spinach. This weekend I realized I didn't have much food in the house besides a can of Muir Glen fire roasted tomatoes and pasta to base meals around...which is okay because I literally had a marriage ceremony with those tomatoes right after college.

Pesto popcorn. Ingredients: Popcorn kernels, grapeseed oil, earth balance, pesto and sea salt.
I whisked the pesto into a little bit of melted earth balance to toss the hot popcorn with.

If I could only eat one thing for the rest of my life id probably choose a portabella burger or watermellon.

If only portabellas didnt cost so much...

I can't wait to eat the portabellas in my fridge, although they made me feel really ill the last time I had them (I'm hoping it was just that batch). All that food looks and sounds amazing. I wish you could cook my tentative return to cooked food (on the 11th), but I think as long as I have bread and/or a burrito, I'll be fine :)

Yum, I must try that sweet and sour tofu. Ooh and pesto popcorn!

Do you toast your black sesame seeds in a skillet before you use them? I find them to be very bitter if I don't.

Yum! I'm always attracted to food pics that have basil and tomatoes and things like that, so even the pasta with tomato sauce gets me excited! :) Love the photos.

Kati- Sometimes I toast the black ones for more flavor, but when garnishing, I usually just throw them on, since it's partially for color/uh, cuteness.
