Almond and Herb Crusted Tofu

This was quite an inspired meal. The tofu itself was inspired by both the grand What the hell does a vegan eat anyway? blog and The Farm Cafe, here in Portland.

It's stuffed with roasted garlic (what the hell does..) and I coated it in a mixture of ground roasted almonds and herbs, ala Farm Cafe's herb-crusted tofu.
Just in case you didn't know, that tofu entree is amazing, and you should go there and use any special occasion as a reason to enjoy it.

On the side are miso roasted red potatoes and chickpeas, as well as roasted asparagus.

On top of the tofu is Veganomican test kitchen mushroom sauce. Next time I'll up the herbs in the tofu, but you get the drift.

The tofu sounds wonderful! But I am really intrigued by the miso roasted potatoes and chickpeas…they sound soooo good!!

Any advice for someone who wants to go vegan but is allergic to soy? Just wondering!

Hi Mary, I made it up as I went along - but the firm tofu is basically cut into triangles, I cut a slight opening, and stuffed it with roasted garlic...
dipped each piece in flour, and then soymilk, and then a mixture of ground roasted almonds, sea salt, thyme, oregano, basil, crushed garlic and pepper, and fried in a small amount of olive oil. Next time I'd marinade the tofu in veg broth/garlic/tamari firsthand.

Lizard Princess - basically, beans are your best friend if you don't eat soy (of course excluding soy beans). Bean and veggie burgers, curries, stews, chilis..yum
Check out the ppk forums, I know I've seen information on soy-free vegan living there.
Do you like nut milks? Almond and hazelnut are particularly good.
