Tons of food porn ahead..

Blueberry mini bundt cakes with a vanilla-blueberry glaze.

VWAV Chili son Carne, with Yves Crumbles instead of seitan. Corn bread, too. This cornbread used flax, it was a bit off for me - maaaybe 3 stars.
Last minute lunch while running to Whole Foods on a lunch break - yucca, plantains and jerk tofu - really, really good tofu. Side salad with ranch dressing (I've been keeping extra salad fixings at the office).Bowtie pasta with pink-stalked chard, snow peas and zucchini in a white wine & garlic sauce. Simply what I was looking for.

I was going to do separate entries, but then I forget to put them up and I feel silly posting food from days and days ago - so I warn you, there's quite a few more ahead..

Tempeh Lettuce Tomato sandwiches
This is mine, with another side salad and a trio of frozen raspberries - which is my new favorite frozen treat, no kid. The sandwich has Dijonaisse & Vegenaise and the tempeh was mutrigrain.

Tommy thought his sandwich was particularly photo worthy:
Portland Vegnic this weekend! Small, but lovely.
I made Dreena's coconut creme pie, and topped it with toasted coconut as her suggestion, and chopped chocolate around the edges. Tommy and I also brought tuscan hummus and garlic bread. Webly brought unbelievably tasty raw lasagna and chocolate mint cupcakes, and a lentil salad.
Blue Sky natural cola + organic cherries from the farmer's market.

I love your food porn. I get so curious, I scroll down just to look at the pictures, then go back up and read your comments. Love the bundt cakes, chili and cornbread, pasta, pie....what did I forget? I loved it all.
I'm curious about yucca. I've never had it. What does it taste like?

Chili son carne looks so good. But Huxley's the best. Great sneakers there, love the blue hue. Who's got the cool tattoo on the leg there behind Huxley? The sandwich looks yummy! And that pie! To "die" for, no doubt. Jess... thank you!!! The bundts are beauties. And tho you didn't make it, i have to say it: Blue Sky is so tasty as well.

Leslie - Yup, I made the the cakes : ) The pie was so creamy and cool on a warm day. I want to try the Sinfully Vegan coconut creme pie next, it uses agar.

Carrie - Yucca tastes similar to an asian sweet potato maybe, it has a light, starchy sweetness. It's really good and filling!

Dragon Slayer - For the cakes, I used the VWAV cherry almond muffin recipe, and subbed blueberries for the fruit and nuts and used soy sour cream (had it around) instead of the soy yogurt. I look forward to seeing some muffins!

Kleo- Thank you, oh gosh. I had been craving chili and I love what cocoa powder and molasses do to it! I had been craving a cold 'soda' with all the hot days Portland's actually been having.
I hadn't noticed the tattoo - that's funny, it's my boyfriend's AVAIL (band) tattoo from way back when.
The Vegnic was small (8 people) and on Waterfront park, it was a Portland/PPK/fur protestor deal that Webly set up.

Mini bundts! So cute! I have mini bundt pans I'm dying to use. Everything in this post needs to be in my tummy now. Especially the coconut cream pie. I would kill a man for a coconut cream pie.

I love all of these Vegnics that you guys have. I wish there were more vegans in my neck of the woods.

Jess this food pron looks simply divine. Love the thought of a veg nic. I am hoping to get some food related event going in my area... a monthly picnic something like that. I'm hungry now, is it lunchtime yet? Good looking sandwich, and those mini bunt cakes are adorable! I’m feeling inspired to bake mini things next time turn on the oven, which will probably be in the fall. I love me some chili, been a really long time since I’ve made any soup or stew.

Catherine - tempeh bacon = yum. I differ from the VWAV recipe mostly with the apple cider - I use a bit of maple syrup instead. Thanks for asking about the move - we're slowly on our way, and have oh, 4 days of packing to do inside of 2.

Vicki - Voila - favorite muffin recipe into the mini bundt pan. The icing was powdered sugar, soy milk and crushed bluebs.
