PPK Samosa Stuffed Potatoes and Peanut Butter Fried Rice

First off, Happy Birthday to Amanda and Joanna!

Down to business - this weekend I tested two recipes for the upcoming PPK book, by Isa & Terr, - Samosa Stuffed potatoes and mango chutney. I was finally not broke this weekend, and had friends over - so it was about time I tested something else, which I'm honored to do. <3

Both turn outs were damn tasty, particularly together, and I have no doubt this cookbook will not dissapoint.

The stuffed potato was served with the spicy mango chutney (super quick too), mulberries and garlic chard. I've been wary for some time now of making Indian food at home, so this is quite a start! Popping mustard seeds is heavenly. This meal sucks in comparison, but was actually good:
Peanut butter fried rice with chard, peas, and carrots, and a side of VWAV based sesame snow peas. I used organic chunky peanut butter and a random bottle of thai peanut sauce a neighbor left with us a long, long time ago. Not so successful as leftovers, though. I think it was creative, so that counts!

Jess- are you testing recipes for the cookbook that comes out after the cupcake one? You're a lucky girl... Both the potatoes and your rice look really good- yum

I'm just testing for the post-cupcake book - I would probably weigh 15 more lbs and my coworkers would love me more if I was testing the cupcake book - but I'll live : )

Megan - I'm so looking forward to it as well. Patiently though, since there's a ton in VWAV I've yet to try. Thanks for the rice compliment! I was pleasantly surprised.

do you know when the cookbook will be out? the Samosa Stuffed potatoes and mango chutney looks amazing! and yes, always extra points for creativity! :o) gotta mention the corn chowder too - mmmmmm,mmmmmm good.

That looks wonderful! Where do you get your indian spices and groceries? I'm curious not just cause I'm a curious gal, but because I'm moving to Portland in a month!

Don't know if you remember me (participated in "midweek munchies" for a few weeks), but I'd love to meet you once I get out there and go eat or make yummy food!

it's silly, but there's this part of me that really needs to know that there's good places for indian groceries and where. i'm at the indian grocery around here ALL the time!

You know and I actually knew an answer to that - Check out India 4 U on Hawthorne and 33rd - it also has an all vegetarian + vegan cafe in it. The spices I used above were from New Seasons and the Daily Grind though - excellent spice collections, as well.
