So I was craving tacos..

Tonight's dinner:

Midweek Munchies contribution:Bulk organic Ota tofu, organic strawberries from the farmer's market, banana, summer squash, zucchini, green leaf lettuce, avocado, tortillas, Wild Oats spicy blue tortilla chips, black beans and a vine tomato.

It's true, I like chocolate tofu pudding. This was sweetened with organic sugar and made with Mori Nu organic silken firm tofu (asceptic packed).

Tofu burrito! I was craving tacos but burrito shells are cheaper and more versatile. The tofu was pan fried with a teeny bit of braggs, frank's red hot and bulk taco seasoning from Limbo.Avocado, hot sauce, green leaf lettuce, tomato, taco seasoned tofu & black beans in a tortilla.

BRAGGS!!! That is one of my staples... I have a huge bottle of it for cooking, and I keep a little spray bottle of it as well that I refill and use for spritzing on individual dishes. Everything you made looks SO yummy (as usual!)...

I bougth some Frank's Red Hot for the first time recently....and then I looked more closely at the bottle and saw that it was made by Reckitt Benckiser....the same company who tests on animals to make things like Lysol and Spray and Wash. And now, looking at their website, I see that they own French's, too. We should be able to buy food without worrying about animal testing!

The tofu looks awesome, though. My pan-fried tofu never looks that pretty. I wonder what I'm doing wrong...

Kleopatra - I also try to keep a supply of bragg's that I buy in bulk in the fridge, and some in the mini spray bottle I refill - the spray amoun is so perfect!

Laura - thanks for the heads up, I was no aware of this - it's stocked by Food Fight so I had hope it wasn't connected to a lot of evil in the world - but I was wrong. For tofu, the keys are seasoning and patience while frying on medium heat - I seasoned while frying these so I also deglazed the pan with a bit of water which was fun to do.

Megan - I haven't tried that one, but I do like that book. I've had tofu pudding on the mind lately : )

Chris - I'd been craving tacos for weeks and just gave in last night and ran to the store, very well worth it~ I prefer hard tacos but at least burrito shells can be used for quesadillas as well.

You know, you don't have to buy the ready-made taco shells. They are easy to make, and taste SO MUCH BETTER!

Just take corn tortillas, heat a fair bit of oil in the pan, and fry one side for a couple of seconds. Then fold it with a pair of tongs and hold one side up with the other side in the oil, frying. You want the side you fried briefly to be on the inside. When the first side is done, flip it over and fry the other side. The only tricky part is frying the first side, keeping the top side up enough so it doesn't get fused with the bottom and making sure it doesn't get *too* crunchy that it all just falls apart.

You can also do this with flour tortillas.

Julie & Amey - for the tofu pudding, I blended one 12.5 ounce (I think) container of organic mori nu silken firm tofu, added one cup or so of melted chocolate chips, a very small pour of soy milk, 1/4-1/2 teaspoon vanilla and a couple tablespoons of sugar or liquid sweetener to taste.
Chill & enjoy! It'll firm up in an hour or two - and I <3 firm pudding. If you like chocolate & peanut butter, add some peanut butter as well! Or mint extract, coconut milk..etc.

That burrito looks awesome - we love burritos :-) My kids would love the pudding - I actually have some of that pudding-mate stuff but I've never used it. Pudding was one of the snacks they had in the chemo room and I can't even LOOK at it much less eat it. But my kids love it :-)

Love your blog, one of the ones I check at least once a week for ideas.

Question for you or others that have tried them.

I made those veggie ribs (the once you have made twice now) from veganfamily. I wasn't too fond of them. They were rather doughy compared to seitan. Did you BBQ them on the gril vs oven? Up the temperature or anything?
