Tah dah..my two day late Midweek Munchies post. Yup, not much going on in the exciting world of my kitchen contents. We went out to eat at Hoda's Middle Eastern restaurant on Monday night (neverended bowl of fresh baked & homemade & hot pita bread!), and I know we had pasta another night, and leftovers last night..salads..sandwiches maybe? I honestly can't remember.
Wednesday marked the return of the downtown Farmer's Market, one block from my office building - I picked up 'big' asparagus, mixed braising greens (turnip raab, chard, kale, etc.) and a head of green lettuce. We went through the lettuce in 2 days of many salads. Thomas' Ragu has made a return to the fridge, along with some adorable mini penne, bulk organic tofu, tomatoes, carrots, bananas, and Tofutti sour supreme on sale for $1.89, among other things I don't recall. In other news, I started biking to work again this week, and we're going to a friend's Cinco de Mayo vegan fajtita & margarita party this evening!
Picked up from Food Fight! vegan grocery: vegan chicken burgers by Li Ta brand & a new pin.The cats hanging out..Huxley with his creepy day glo eyes.. I made some more ranch dressing, this time subbing half the mayo with sour supreme.Very not glamorous pan fried party of italian marinaded tofu, red peppers and mixed greens, served over pasta with tomato sauce. The tofu was marinaded for an hour in 2 parts balsamic viniagarette, 1/2 part braggs, and 1 clove of crushed garlic.I forgot to take a picture of the finished cake, but here's the bottom layer with Very Pink black raspberry buttercream filling cake I made for a fundraiser.

Vegan fajita and margarita party?... how fun, Jess!! I love margaritas, but really I can only have one - whoooo - too lightheaded if I have more than that! :) Have a great weekend, and that cake looks mighty yummy!

The Sour Cream was from The Daily Grind on Hawthorne - the hydrogenated was 1.79 and the non-drogenated 1.89~
Wow, Jess, fantastic!!! I love everything but the Ragu sauce! (I won't buy their products 'cause they also make sauce with meat in it and I don't trust them, but that's just me!)
The cake is so bright and brilliant. I like it!!!
While in Chicago I had a No Meata Fajita at The Chicago Diner and it was soooooo good!!! Party on, Jess!
You are incedibly lucky to be able to shop at Food Fight in person! I browse the website and drool. I'd say amazing score on the sour cream. It's around $4 here too. I'm also jealous of your farmer's market being open. Ours doesn't get going until the May two-four weekend.
