Cactus and Cannolis! (cooking adventures with Webly~)

Salad with lettuce, carrots, apples, toasted coconut and almonds, avocado and a spicy yet zesty lime vinaigrette. The vinaigrette was made with fresh lime juice, guar gum, coconut oil, chili powder, fresh grated ginger, sea salt and agave nectar. The dressing was SUPERB.
Cactus Gumbo from The Artful Vegan, served with sliced avocado, tortilla crisps and habanero hot sauce. The recipe was too salty, but it was so good besides that - that I am intending to make it again with black eyed peas possibly. Webly was kind enough to half the onion intake, thank you!
Peanut Butter Mousse Cannoli from The Artful Vegan. Mousse = amazing. Takes a really long time to set, but so worth it!! It was an extremely delicate dough, but I am very proud of what we made. Not as crispy as I'd like, but still gorgeous/decadently delicious.

Forget the rest of the cactus and such, this canoli is the best thing I've seen in a long time.

I checked the cannoli link. I like (is it Welby?)'s post about it. It's funny she said the "pain and suffering wasn't worth it in the end" and you totally said the opposite!

I thought that was hillarious when someone asked where the cactus was from! I could send you guys some!!! Agave nectar is a good price too (well, decent, compared).

The mousse is totally worth it..probably not the shells...but the mousse..wow the cocoa butter is holy.

I've never had cannoli, but those look awesome. Especially because there's cocoa butter inside. I must get my hands on some of that stuff.

Yeah, the shells weren't worth it. Mine are now all soggy in my fridge. The mousse was painless AND heavenly! I think I want to try it without the peanut butter next time.

oh.my.god. I have no words. Those cannolis look incredible. I had some delicious non-vegan cannolis when I was in Boston a couple months ago, and this is making me want a vegan version sooooo bad. You rock!
