Sunny Blueberry Corn Muffins


Sunny Blueberry Corn Muffins (with a touch of lemon rind) from Vegan with a Vengeneance. This is the second time I've made them, and I can't stress enough how easy and perfect they are.

Ooh, I love these! So good. Your are prettier than mine were, though - my frozen blueberries turned the batter a gross green.

I didn't let my bluebs defrost at all, and usually I do, no color bleeding and still awesome tasting. But green, regardless, wierd - unique?
