Ellen's Macaroni and "Cheese"
Boil water and cook preferred noodles, curly noodles work best.
While the noodles are cooking, mix the following dry ingrediants in a saucepan (not on heat):
- 1/2 cup nutritional yeast flakes or powder (I prefer powder, and get it in bulk bins)
- 1/2 cup unbleached flour
- 1 tsp salt
- 1/2 tsp - 3/4 tsp paprika
- 1/2 tsp - 3/4 tsp garlic powder
- 1/4 teaspoon black pepper
Turning the heat to low, stir in the following:
- 1.5 cups plain/original nondairy milk*
- 1/2 cup water
Stir over heat until thick and well-warmed. Remove from heat, add 2 tablespoons of margarine, and add to 4-6 servings of the cooked and drained pasta. Optional: add in greens beans, peas, broccoli, whatever you like~ The sauce is very versatile, so play with it - add to nachos, use in a pasta bake,a dip, etc.
*I prefer using plain soymilk or plain almond milk in this recipe, but you can use any type of plain milk. If you are low on soymilk, I've substitued water for the majority of the soymilk before when running low, it's just not as creamy, so add a teeny bit more margarine.
