Angel Food Marshmallow Making

Back in September, I bought myself a New Zealand-based Angel Food Vegan Marshmallow kit from Food Fight! on my birthday.  Ridiculously, it took me until this past weekend to make them.  Sure, it also took me a couple months to build up the nerve to buy non-organic corn syrup in the first place - I wanted these as old-school as possible.  With a cheap candy thermometer and my supplies ready, I spent a Saturday night making vegan marshmallows.....and then rewatching LOST, and eating marshmallows with friends.

The process did take time - though I'm sure I was done within 40 minutes of less: boiling, whisking, measuring, whipping, taking temperatures and setting. Go figure, as a food blogger, I enjoy spending time on culinary projects.  The end product wasn't as Sweet and Sara marshmallow-fluffy (or traditional) as I'd hoped, but they are smushy and sweet!  I felt a tad silly buying a kit shipped from New Zealand for a vegan indulgence, but it was a positive purchase from a vegan company that I made at the local vegan grocery store, and for my birthday!
FYI, this kit and a meringe kit are also available via mail order from Food Fight! and Angel Food itself among others. 

The Black Raspberry variation was considerably...smushier, thanks to the extra liquid from the local black raspberry jam.
 Psst, I know (and have sampled!) Julie Hasson's progress on bringing vegan marshmallows to the masses as well!  Thrilling news after the Emes-isn't-vegetarian-gelatin tragic story from a few years back.

I have a dry mix of this that I bought in July.. so you are ahead of me! Love the black raspberry variation!

I made these awhile back and was very disappointed. The marshmallows had the consistency of stiff pudding. No fluff at all. They were like marshmallow-flavored pudding cubes. And they dissolved when I tried to make rice krispie bars.

Yay! Marshmallows! Now I don't have to keep spending $6 a piece on Sweet and Saras. On second thought, this seems like a bit of a process :)

Gabriele - I admit they are more soft that fluff - I actually think I preferred the 'foam' before it set. I did find the texture fluffier than stiff pudding though..that doesn't sound appetizing!

Kaylie - What happened? I was worried my mixture wouldn't fluff again at the end once I put it all together, but after a minute or two on high speed on my mixer, it absolutely did.

I made these a few months ago! they took forever to ship, but so worth it for 5$! mine ended up very tasty, but just a tiny bit.. squishy. my omni family said they were "dense" but close enough. apparently they have updated the recipe instructions since then, though?

i wish i had more time to be ambitious in the kitchen. the closest thing i come to marshmallows is that ice cream topping made by smuckers that is vegan but chemically-bad-for-you vegan.

I just made these too! (in fact they're still in my fridge.) I agree they're not quite as awesome as the Sweet and Sara Marshmallows, but still pretty yummy. I think they're a lot like non-vegan marshmallows actually.

this sounds amazing! i don't know how you are not in a constant sugar coma with the cookie testing and marshmallow consumption. the big question is: are they s'mores-able?

Ridiculous? No way. That looks like a lot of delicious fun. I think I would have been inclined to dip some of them in dark chocolate. Oh yeah!

why do i never see pics of marshmallows rolled in TOASTED COCONUT!!!
