I filled this one with spicy mexican Field Roast, black beans, chard, cumin, hot sauce, garlic and a slice of Galaxy rice cheddar for the hell of it. It was awesome and I was happy to be eating a homecooked meal again. Now if I only had the time and energy to make another one....

Damn, I wish I could make a vegan omelet that wouldn't turn into scrambled "eggs." I tried the Fat-Free Vegan's omelet recipe (which looks a little like this one), but it stuck to my crappy not-so-non-stick-anymore skillet. I'll make it a point to buy new cookware before Isa's book comes out.
