Fakin' It.

Crack of Noon Omelet

This was the first actual meal I made after my NYC vacation. It's another test omelet for Isa's upcoming Crack of Noon brunch cookbook. She came out with version #1 a few months ago, which I've made a few times, and this one is even better! She knows her shit.

I filled this one with spicy mexican Field Roast, black beans, chard, cumin, hot sauce, garlic and a slice of Galaxy rice cheddar for the hell of it. It was awesome and I was happy to be eating a homecooked meal again. Now if I only had the time and energy to make another one....

OK, so my friend that did "try vegan week" (albeit a week early, but still!) finds that since she went back to regular eating her tummy is REALLY not interested in meat any longer. Like, severely. Whoa!

Damn, I wish I could make a vegan omelet that wouldn't turn into scrambled "eggs." I tried the Fat-Free Vegan's omelet recipe (which looks a little like this one), but it stuck to my crappy not-so-non-stick-anymore skillet. I'll make it a point to buy new cookware before Isa's book comes out.

Congrats on the award. Just so you know, your blog (and the Vegan Lunchbox blog) were the first two I started lurking on about a year ago..and the inspiration for me to start my own blog in December last year.
