Crack of Noon Test Kitchen & Eggplant No- Noodle Lasagna

Peanut Butter Waffles, a Crack of Noon test recipe, with tempeh bacon.

You see this sad looking eggplant below, that was 1/2 off at the coop? It became dinner.

I was inspired to make this eggplant-as-noodles lasagna. It has tofu almond ricotta, basil marinara, kale, fresh basil and some teese on top, what the hell. I'd never done a noode-less lasagna before and the experiment was exciting.


I made a small one, in a loaf pan, with circular cuts of eggplant for easy slicing.
Here it is pre-baked.


Cooling for consumption.


Sliced! Not the prettiest thing, but it was sure delicious. Even the anti-eggplant person in the apartment enjoyed it.

I hate eggplant, but that lasagna could possibly change my mind. I love that you cooked it in a loaf pan. You're so clever!

So do you make a whole batch of waffles and then freeze them for re-toasting later? If so, that's a great idea. I live alone and always end up with a ton of waffle batter.

I went to Grocery Outlet to get some of that Jason toothpaste (two boxes!) and a few other natural products and saw a big AXE set with rubber ducky. Why didn't you pick that up, too? :)

noodle-less lasagnas are delicious! sometimes when i'm drowning in zucchini from the garden i made noodle-less lasagna, but i haven't tried eggplant yet. i think i first had one when i was 12 or so (it was vegetarian, but not vegan), and i always liked the idea. especially since cooked lasagna noodles can get awful sticky. also, you keep tempting me to get teese!

Your "lasagna" looks fab. I'm not an eggplant lover by any stretch, but if I had to eat it I couldn't imagine a better way than that combo.
