Breakfast!

Saturday was an awesome day.
Thomas and I ate this delectable, but not too filling breakfast, took a long walk, spontaneously went to OMSI (science museum) where was a dinosaur exhibit!, among much else, and finished the day watching the Trailer Park Boys movie at the Clinton Street theater. Gah!

Banana waffle, maple syrup, fresh sliced bananas and baked tofu bacon.

My pancake skillz weren't coming together (ah, fate), so I made the Crack of Noon test recipe for Banana Flapjacks in my waffle maker.

For the tofu bacon, I baked my slices in marinade for 25 minutes on both sides, just less than an hour total. The marinade was based on the VWAV recipe - consisting of maple syrup, tamari, liquid smoke, crushed red pepper, water and tomato paste. I baked them at 400 for 20 minutes, and then 425 for the rest. I flipped them over once more (third time) for a quick broil at the end.


And some french pressed coffee.. (Stumptown Breakfast Blend)

Wingnut Confections Goji & Brazil Nut Cluster. I got this for free from People's Coop, and it's superb! I'm not a big brazil nut fan, but they're so crisp and clean in this.
It's an all-vegan chocolate company, and their motto is appropriately, "candy with a conscience". Thomas and I shared half of it so far. You can never get enough goji, you know.

Green eyes - we bought them at New Season's market in town, but I've seen them elsewhere as well - I'll try to remember to look at them tonight and see if there's more information..

Loved this post (how could I not, with Trailer Park Boys--some Canadian homegrown talent--in it??). The waffles also look gorgeous. And funny, I just posted an entry about granola with gojis in it (and about avoiding chocolate--so your goodie really made my mouth water!).

Those waffles look divine.

We were debating on getting a waffle maker and I didn't want to. I mean, we already have so many gadgets in the kitchen. But, hey, what's one more? Especially when you can have waffles like that.

I saw an article about Wingnut in the paper (Tribune I think), he makes all his deliveries by bicycle. I haven't tried them 'cause I only crave chocolate twice a year.

The waffles look fantastic. Making pancakes is always a crapshoot for me. Some days they are gorgeously beautiful and fluffy and then other days they look like they came out of the gutter.

You know, I had been wondering if there was a homemade tofu bacon recipe. There ya have it!

Damn! That is a fine breakfast. I am hungry for it now, even though I just had lunch! I was in Portland this weekend and it was GORGEOUS.

herbstonne - The exhibit was fun! I enjoyed how the exhibit was focused on dinosaurs from China, but other than that it was meek in comparison to others dino exhibitors I've seen - but those have mostly but at the Museum of Natural History in NYC.

almost vegetarian - it's a small appliance in comparison to others you could add - go ahead! my encouragement : )

erica - the bike delivery is so cute - I think it says that on the packaging, too.
