In fact, the majority of the berries we kept eating as is, until this fantastic blueberry, strawberry & coconut waffle, made with whole wheat pastry flour and applesauce for most of the oil. It's the VWAV pancake recipe, by the way.

I admit this photo is crap, BUT this homemade peanut butter brown rice syrup sauce was superb, if I do say so myself. I like brown rice syrup more than I thought I would, which
isn't much. It's over Vanilla So Delicious.
This was a very simple, but extremely satisfying meal: I sauteed some Tofurkey Sundried Italian sausage in a little canola buttery spray, toasted a fat free english muffin with garlic, steamed some broccoli raab and threw a little sundried tomato and red wine marinara on the side. Squisito!
This one is from a couple weeks back - tempeh bacon (VWAV) open faced sandwich with spinach, tomato, avocado and Vegenaise.
Fiesta Soy Curls Nachos, which I raved up on the ppk, and saw in action at Vegfest back in May.
I bought them at Food Fight, rehydrated, and sauteed in olive oil, garlic, diced jalapenos and bell pepper, fiesta chili powder, tamari, hot sauce, ancho chili powder, cumin, oregano, sea salt and pepper.
I served it on top of jalapeno tortilla chips (Trader Joe's) and melted FYH cheddar, with a side salad topped with fresh lime juice.

I LOVE that tempeh bacon recipe! my honey prefers tofu bacon, though.. I usually make both.

all thru college frozen grapes were my favorite snack. it never occurred to me to try other frozen fruits as treats. blueberries sound yummy indeed.
Oh god, everything looks so great- amazing! I love how many greens you use, you could really teach me a thing or two.
And blackcaps! I missed the market last Saturday, but will be there this Saturday for sure, I grew up eating blackcaps everyday during the summer in Pennsylvania.

Caty - The blackcaps and technically black raspberries. They are smaller, and seedier than typical raspberries, and less 'tart'. Personally, minding the stuck in your teeth seediness, I liked the balance of flavor more than typical raspberries.

Melody, it took me years to try the tofurkey, and I've only braved the sundried tomato as of yet. Good luck! I kinda want to use one for a gumbo, too.

I love brown rice syrup - is it just mixed with pb here? Totally digging the waffles too...I've been making tons lately.
