Grilled Tofu and Pizza happiness

Hey guys, here's an update I meant to post before leaving, but will actually post from my hotel in Bellevue. So, If you have any really last minute recommendations for dining/coffee/shopping/record stores/bars in Bellevue/Seattle, let me know~ By the way, we've been to Teapot, and <3<3<3.

Grilled tofu (drained, pressed and marinated in tamari, balsamic viniargarette and balsamic vinegar).
Portabella slices (olive oil, garlic, chopped basil, tamari, balsamic vinegar) and asparagus and my dear late spring friend, scapes.
Quinoa (pasta, screw you!), steamed kale and roasted red pepper and fresh basil marinara
. I really do find myself making marinara about once every 2 weeks..

Thomas' return to soy cheese pizza - Follow Year Heart mozzerella (the slices melted but not the shreds here??), white mushrooms and marinara.

My veggie packed pizza, as per usual: broccoli, roasted red peppers, zucchini, white mushrooms, more morels, chickpeas and spinach. I sauteed everything but the peppers in a little bit of earth balance before adding it onto the cheez and sauce. It's been over a month, at least, since we had pizza and I just had to make it..plus it used of vegetables that need usin'. The Follow Yours Heart mozzerella is sliced on one half.

Aw, romensco!

Baked falafel pita, with hummus, tahini, lettuce, tomatoes and cukes. The falafel and tahini recipes were from VWAV. Honestly, baked just doesn't compared to fried. At all.

Fruit salad on a hot day? Priceless. Or 50 cents mangos. Something like that.

You have such a way with grilled tofu. Every time I see those grill marks, I get jealous.

mmmm delicious. i find myself making marinara at least once every couple of weeks too. it never ceases to satisfy!
