PPK coconut creme pie, potluck porn & 7 random things


Here's the coconut creme pie I mentioned in my last post. It's an agar pie that will be in fall's Veganomican cookbook. I made it for a ppk potluck, and topped it with strawberries, coconut flakes and some chocolate chips. The crust is organic and storebought - not me!

Also made for the potluck - Veganomican mini chickpea cutlets and Candle Cafe's cornmeal crusted tempeh. Speaking of Candle Cafe, isn't it time I booked a trip to the east coast again??

My potluck plate - tempeh, chickpea cutlet, veganomican mapley bbq sauce, lemon poppyseed cookie, lolo's baked donut (by michelle and aaron), joanna's wild rice salad with chickpeas, bowtie pasta salad with artichokes, pesto biscuit, webly's roasted corn salad with tofu and a piece of broccoli from a creamy salad.

Our potluck was at the Kruger's Market picnic area - and at the market itself, Tommy and I scored 50 cent mangos & 4 for $1 avocados and kiwis, among other greats (though obviously not grown in OR, I did get rhubarb from the farm itself).

Featured above is some mango, kiwi, apple and strawberry fruit salad, from our Sunday brunch.

Organic red and baby new potatoes, roasted with cumin, rosemary, sea salt, pepper and rice bran oil. This was actually from Saturday morning, wondering what to easily cook before the potluck.

The Sunday brunch - lemon cormeal pancakes (VWAV waffles), tempeh bacon, smoked paprika & herb roasted potatoes and kiwi.

Wholefoods makes chocolate covered apricots, but they're about $9/lb and therefore costly, so I decided to make some at home.

Old favorite dinner - organic fusilli with a red wine and roasted orange pepper marinara, grilled eggplant and Italian tofu, steamed broccoli. Mangia!

Veganomican lower fat banana bread - this one with a bit of peanut butter and chocolate chips on top. I actually prefer the chips on top, and not in the bread.

  1. Although last year I blogged rountinely about my weekly CSA share, and what I'd made from it - this year I'm forgoing the 15+ block walk with often heavy vegetables, and sticking to the farmer's markets, the local coop and New Seasons. I have my reservations, but overall it's a smarter idea for us this year. Plus, Sundays at the farmer's market are just a treat.
  2. I have a BSSP degree in Marketing Communication: Advertising and Public Relations from Emerson College in Boston, MA.
  3. My bangs are currently pink, although I have a 'professional' job.
  4. I can't stand fennel, licorice, onions, lemongrass, cilantro, coriander, scallions. Sorry!
  5. I'd like to have my own vegan baking/cooking project. A small-medium sized veg*n cafe in Haarlem, The Netherlands is my dream gig. However, I am very, very nervous to cook for others in my own home.
  6. I'm about to finish season 3 of the sopranos. !!!!!!!!
  7. Watching the sopranos has me craving Italian food - in particular red wine, marinara and pasta, constantly. More than usual. It's dangerous.

So now I'm thinking that instead of learning to cook better when we move to Portland, we'll hire you to be our personal chef. Whaddya think? Good salary and benefits! :)

Mmm, all that food looks so good!! Especially your pie and sunday brunch (i'll have to try the waffle recipe as pancakes) and the banana bread.

Jess, you are really making me want to test that pie recipe out now. I'm usually nervous about cooking with agar, but maybe things will work out for me. Also, I need to make the chickpea cutlets again. They are so good!

That pie is so pretty! I must make one now. That bread looks particularly tasty, too - come to think of it, I think I like choc. chips better on top, as well!

I loved reading your list! (Lemongrass???? NOOOOOO! just kidding) If you open up a cafe in Haarlem, I am so there. But like you, I fantasize about cooking/baking professionally, but get really nervous when it comes down to it. Your cooking is way more advanced than mine, though. Go for it!

That pie looks delish! I too do not care for cilantro. I can't remember the website, but there is actually an anti-cilantro group on the Internet.

i also dislike licorice and fennel....and you know already we share a dislike for cilantro/coriander.
i freakin' love isa's Lower Fat Banana Bread. i think that's my most used recipe. with chocolate chips of course.

Your coconut creme pie is so beautifully decorated. It looks like you picked it up from a bakery. Magnifique! I am amazed at the variety of food that you make. It's quite impressive. I am losing steam and don't really have the desire to cook much lately. I think it's the heat. High 80's here right now. Way to hot for the oven.
