Cats and cookies: A Simple Post

Let's start with Zelda, guarding a box of cookies that a fellow ppker, Jen, sent me as part of a cookie swap...

'Raw' coconut cookies! Fantastic.

It's been a while, so I made a batch of tempeh bacon a couple days ago.
Tempeh bacon sandwich with vegenaise, yellow tomato, lettuce, avocado and a side salad.

Whole chickpea hummus, tahini, chili sauce, wheatberry and roasted asparagus salad in a whole wheat pita from the downtown farmer's market. This was so much better than I thought it would be - so satifying and wholesome.

Bryanna Clark Grogan's Breast of Tofu, pan fried. I actually like the baked version better in the following photo, less greasy to me, but both are great! Marinading is key with this dish.
I tried it at her and Julie Hasson's lovely Soy demo at Vegfest, and just had to make it myself that night! I look forward to making some more and having it cut up over salads this summer.

Tonight, I make a coconut creme pie. Have a relaxing weekend, folks!

Did Zelda try a cookie (which, by the way looked beautiful sitting in that pink tissue paper)? My cats are always curious when I am cooking, but don't always want to try. I have one cat, Beaker, who will try most things, it's odd!

ooooh, that whole chickpea hummus sandwich looks amazing. I could gobble one of those up right now!

Also, I love that breast of tofu. I always make the baked version and I love it so, so much. Maybe I should make it again - now you got me thinking!

mmmm...tofu boobs....(sorry, i had a relapse into my younger days when we thought it was funny to say chicken boobs instead of chicken breast)...i loved that sample the best at the demo.
ok, so you made coconut cream pie and you didn't call me yet to take a piece off your hands?
