On the Mend but in the Kitchen...

I have a lot of extra, wonderful time on my hands due to the injury, and besides watching seasons 2 and 3 of scrubs, random daytime tv and napping, I've hobbled into the kitchen for some cooking..

Fudgy Wudgy Blueberry brownies, topped with toasted coconut - a ppk test kitchen recipe.



My dear friend Joanna is putting together a lowfat vegan cookzine, and these are her simply fantastic sesame green beans.

Marinated Portabella mushroom and avocado hoagie with vegenaise, spinach and tomato. The marinated and roasted portabella is a ppk test recipe.

Joanna's mustard crusted chicken style seitan. Both the breading and seitan are her tasty recipes. On the side is the mac and cheez casserole from th New Farm cookbook - halved, less oil, and more spices.


Trader Joe's new peanut toffee is vegan. Do I need to say much more? Well, I'll add that it was a fabulous treat during my couch time, and tastes like the inside of a butterfinger bar.

And there's the timer for my herbed pizza dough..time for a second rise, and then for more couch time. Thanks for all the kind words, you guys~ I'll be back to work tommorow (brownies in tow), and out of the boot in 2 weeks or so.

How do I get TJ's to come to Texas! It's so not fair.

Sorry about your pinky toe. I broke mine once so I know how painful it is.

Wow, now I'm not just waiting for that ppk book to come out (blueberry brownies?? i'm so there) but Joanna's cookzine, too. All this waiting for all this yumminess!
And why, oh why, won't TJ come to upstate NY? grrr.

That picture of your toe and kitty is so cute- I hope you heal quickly.

Wow, you really must have done a number on your toe to have to wear a boot thing. I've broken almost all my toes - some twice or more - and never had to wear one.

Heal faster toe!

Erica - How strange! Maybe they knew the boot would make me more fashionable? We'll never know..

Megha- Unfortunately I can't give you that recipe just yet - it will be in the new PPK book that's coming out next winter, I believe. I am very fortunate to be one of the testers for the new book.

Eat apples and raisins! It helped my foot heal, hopefully it will work for you.

The brownies, the beans, the seitan, the mac and cheez...it all looks soooo good. And that toffee?? Geez. That looks a bit dangerous. I used to LOVE butterfinger's.

Your black kitty looks like MY black kitty - so cute. Hopefully he was using his magic cat powers to heal your pinky toe.

Sorry to hear about your injury. . . but at least you get some time at home, right? Those Blueberry Brownies are intriguing, and the Mac N Cheeze looks so good--I'm excited 'cause I just ordered the New Farm Cookbook yesterday. Something to look forward to, I guess.
