VWAV breakfast


Tempeh bacon, tofu scramble, local russet homefries and Grand Central rye toast with whipped earth balance, and ketchup.

Homefries - first I steam the potatoes for 6 minutes, then fry them for 15-20 minutes. These are pan fried in olive oil, and seasoned with sea salt, freshly ground pepper, garlic powder, spike and yup, Emeril's original seasoning (which I think is pepper, garlic powder, paprika, cumin and one or two others).


VWAV - based tofu scramble with cumin, spike, chipotle chili powder, sea salt, paprika, garlic, turmeric, cherry tomatoes, broccoli, carrots, corn, black beans, snow peas (what the hell), Aardvark habanero hot sauce - served with avocado on top.

I bought an Endangerd Species Dark chocolate with Deep Froest Mint on sale for 1.69 this week, since Tropical Source mint has been my long standing favorite chocolate bar - I tried a small piece but it's dark to eat alone, so I'll use it chopped or melted or maybe shaven in a future project.
As for tofu scrambles, I very rarely make them and over the past 6 months I've really been cutting down on soy. I tend to get bloated if I eat it too regularly. Regardless, I've had it more than usual this week..but I had a chunk leftover and have been inspired by all the talk of the scramble on the ppk boards. I made this extremely close to the original recipe but halved it, and I shouldn't have fully halved the spices, but with hot sauce all was well. I should have quartered the recipe, I've been used to making dinner for two this week and always forget I don't dig tofu scramble leftovers and my boyfriend has passed on tofu scramble since an accident with a leaky tofu scramble burrito. I had 1/2 a piece of toast left and a piece of tempeh bacon..and an enormous amount of potatos, but those leftovers will definitely get eaten and were created purposely.

I'm so hungry and have yet to go shopping since returning from our trip - I shouldn't be reading these blogs! This looks so good! I'm making penne rustica tonight which has roasted potatoes in it - now I really can't wait after looking at yours! BTW, on someone's blog (Dreena's?) you made a comment about your advertising degree - you didn't by any chance get that at UofO did you? I did :-)

Hi Nancy, I'd love to hear more about the penne rustica, I hope you make a post with it. I'm actually an East Coast transplant, my degree is from Emerson College in Boston~ What do you do with your advertising degree? Mine is a Marketing/Adv/PR trio and so far I mostly use the Marketing/PR part at my job (after trying to get a job involved in the field for a year +).

I never went to work in advertising - decided halfway through college that while I like the creativity I didn't like the culture. but that's me. My husband and I work together from home doing architecture (him) and interiors (me). I do mostly colors and finishes. I love color!

A leaky tofu scramble burrito -- that's funny. Is he off tofu scramble forever?
I tried tofu scramble for the first time last weekend. I love weekend breakfasts.

I LOVE the Endangered species Mint Bar!!! It's my most favorite. I think I have a pretty heavy duty chocolate tolerance, because I love it all by itself!!

Creativity vs culture - i faced the same dilemma when going for my graphic design degree. I think creativiy is winning out though and after my 1 yr sabbatical i'm going back for jewelry design.

Oh man does that breakfast look good! I'd leave off the tofu, though. I never liked eggs, so a tofu-egg just really does nothing for me.

The Tropical Source mint bar is amazing, but their bars are much milder in general I think. They almost remind me of milk chocolate. I do like the Endangered Species bars, though. Isn't the Deep Forest Mint like 80% dark? I've always been a little scared of that one.
