Food porn hoopla!

Saturday night we went over our friends' Ellen's & Julie's for breakfast for dinner : heart shaped vegan waffles with maple syrup and excellent fruit salad. Thank you ladies ~ Peanut butter on waffles with maple syrup - holy crap it's good!

'Craving faux sausage' breakfast for champions - half a Soy Boy Okara Burger sandwich, red potato home fries seasoned with smoked paprika, sea salt, freshly ground pepper, cayenne and garlic powder & tangelo slices. If you like paprika - check out smoked paprika!
Also, sad news - one more frozen okara burger in the freezer - fortunately I have a NY trip in early June!!!! I get to see my family and friends and eat in NYC, very lovely.
This past Sunday Webly and I had a couple cooking projects on our minds. First up we have mango Macadamia nut salsa with Kettle Chips organic yellow tortilla chips.Below: coconut crusted tofu, macnut salsa and fresh greens tossed with fresh lime juice. The tofu and the mango dish are from Vegan fusion.com - recipes here.

We increased the marinade ingredients - particularly the garlic, tamari and tahini, and increased the baking time for the tofu by approximately 15 minutes. The crumb coating is scrumptious - I have some leftover to look forward to using as well.
Of course, we also made dessert - tis our Fondant making extravaganza/frustration/fun. He lost an arm so we gave him flowers.
I didn't have the patience for the fondant, and with practice that can change, but I had a good time making a really sad Spongebob mini cake, regardless.

That's it for now, coconut banana bread is cooling in the kitchen~

Wow, that is some enticing food porn! I've never even heard of vegan fondant before, either! That's really spiffy, I'll have to try it out some time.

Whoo, there's a whole lota cookin' going on here! I was ready to eat the heart waffles, but then came the mango macadamia nut salsa, & cute little cakes. I'm amazed.

Holy cook-off! That's amazing... those cakes are incredible - so colorful! My daughter would love the spongebob one - she calls him "smartie pants"... I have no idea why - she has never seen the show, just saw the figure everywhere, loved it and called it smartie pants! Anyhow... we also love nut butters on waffles (almond and cashew too)... and with some applesauce as well. We don't have those special heart-shaped ones though! :)

WoW! What creative cakes. My dd would love a fiddly thing such as this... you said the fondant was from a candymaking shop? Beautiful Easter treats, pastel and springy.

This looks awesome. I'd love to cook with you (I don't have cooking friends, Hint-Hint, Julie who lives near me). I love the colors of the salsa.

I didn't know frosting like that fondant was vegan. Is it almond paste? And the coloring, is it natural or fake? Did you already answer these questions and I'm just blind?

Everything looks great as always!
