Revamping leftovers, anyone?

It may not look great, but it's tasty.















I wanted to give some life to last night's pasta/tomato sauce/chickpeas galore/spinach/broccoli leftovers, so I added some shredded mozzerella soy cheese (for reals) - mixed it in and generously threw it on top, and baked it for 15-20 minutes at 425F.

And last night's real treat - soy cream sundae.
I had a 55 cent off coupon for Soy Delicious, and they were already on sale for 1.99, so I picked up a new flavor -Raspberry ala Mode. It's vanilla soy cream with raspberry sauce swirled (very yum) and brownie chunks (more like pieces and very soft - more like a wet boston cookie, yuck). I added dutch chocolate sprinkles and Ahlaska chocolate syrup. This along with Scrubs and a new SVU, and an awake boyfriend, not a bad evening.














  • Additionally, any chickpea ideas for me folks? I'm leaning towards a half pureed/half chunky chickpea and potato lemon-rosemary stew...sorta based on the Angelica's restaurant cookbook version.
  • I'll probably make more hummus and roasted chickpeas, but I'd like to branch out. I'm not really looking for an Indian dish, sadly, as Indian deliciousness was my lunch today and will be tommorow, too.
  • Additionally, any commentary on Earth shoes? complaints? adoration? I'm very seriously thinking about buying a pair of solar shoes.

First off, what kind of "cheese" did you use? It looks good!
I highly recommend Sensational Sun-dried Tomato and Chickpea soup from "The Garden of Vegan". It is to die for.
I can't help you with the Earth Shoes. I had a pair of shoes years and years ago...we're talking late 70's that I'm positive were Earth shoes. I didn't know they were still arround (if this is even the same thing) If you find out anything, let me know, or post on your blog. If they are the same as the ones I used to have, I'd love to get some again. Comfy!

1. My soy cheese never melts like that. Apparently you have soy cheese magic.

2. Re: chickpeas - if I had a bucket of chickpeas to use up, I would look to Indian food. Channa masala perhaps?

It was Follow Your Heart! I've only had problems with mine melting after it was frozen..and that's with not defrosting..other than that, it melts perfectly! (for a soy cheese) It's also important to use a thick layers of shreds, if not, it dries out too quickly.

Carrie- I will let you know about the earth shoes!

vegancore- definitely the best svu I've seen in quite a while, especially this season.

That sundae looks insanely good. For the chickpeas--how about that recipe in for Chickpea Broccoli Casserole in VwaV? I know there is also a Hummus-Quinoa Casserole in Vive le Vegan (or am I just imagining that you own these books . . . ?) These are two I've been wanting to make for awhile. Adding other beans for a 3-bean (or 12-bean) soup is another option. Can one freeze hummus? Also--chickpeas mashed with veganaise and some celery/onion/dijion/whatever you put in tuna salad, on a sandwich.

My only insight is that I bought a pair of earth shoes from Zappos and I couldn't keep them because the sizing was weird. I hate Euro sizes.

Also, I'm sad I missed SUV. Love that show.

That ice cream is something I must hunt for immediately. WOW. Your leftover dinner night with your awake boyfriend sounds great. I have only had a tiny bite of soy cheese once, didn't swallow it, and never thought about it again. It made me get over cheese (6 years ago). It's cool that you like it though, it makes your meal look nice and I seriously cannot stop thinking about that ice cream. I want it for breakfast... now.

chickpeas:
fake o tuna salad/sandwhich w/ apples, pickles, celery, no onions, veganase...
toast them with olive oil and spices
VwaV broc and chickpea cassaroll
toasted, or not, on a salad
Throw some in pilaff. I will be posting a quinoa one later, just change it to rice.
Make a chickpea smoothie!

Mashed chickpea salad - I've considered this, but was never a fan of chicken or tuna salad, so I've been nervous to try it, but I eventually will~
However, I think I'm going to go with the VWAV chickpea broccoli casserole for the remainder of my chickpeas, hoping I get my book back soon or it's posted somewhere ; )

Sarchan- I don't know if hummus is freezeable, but thanks for the hijiki inspiration!

Emily- SVU was the best one I've seen in a while. I wish what is it, TNT or USA so I could relax and watch it now and then..but it's probably a good thing I don't.

kaivegan- thank you~ My boyfriend has worked grave this past year, so it's nice when he wakes up an hour or two before his shift and we can actually see each other. It's stressful, but we've handled it fairly well.

eatpeacepleace- I'm iffy on soy cheese, I love the effect on baked Italian dishes and shredded onto tacos (old old taco bell love, ew). My boyfriend was a bigger love of it than me, but I wanted to give this dish some new life, it wasn't saucy enough so it needed something. Enjoy the soy cream!

Webly- bean smoothie. You read my mind.

Amy- hi! I've been wanting to make that casserole for far too long, and I very much look forward to my dear friend returning my dear book. I think this is the dish to end the week of chickpeas.

Earth shoes: after seeing the pic on your livejournal I see they are very similar to ones I bought about a year ago. From Zappo, too....they are kind of uncomfortable. I keep hoping to find some good vegan shoes that are comfortable but I just haven't found them yet. But my feet are special needs feet....I have large, wide feet with plantar faschiitis (flat-foot induced pain) and need good, comfy shoes. My absolute faves right now are Birkenstock boots (Lawrence) that are leather....but I bought them at Buffalo Exchange, so at least they are second-hand.

I have a pair of Earth shoes (Karma) and I do like them. The Karma's a clog-like shoe and I was a bit surprised at how much of a heel lip they had, which rubbed on my heel at first, but I quickly got used to it and won't be a problem with the Solars anyway. The "fabric" is a bit stiffer than leather. I find them to be comfortable, but it did take a while to adjust to the different feel of them -- I wore them very sparingly at first for fear of blisters. I'm probably going to buy a pair of sandals for the summer.

I get a lot of "Oooh, are those Earth shoes? I used to have a pair of Earth shoes years ago!" I did too.
