Lunch and Dinner 3/2/2006, featuring Roasted Garlic Chickpea Potato soup

My India Chaat House lunch special leftovers from yesterday. I indulgently bought another order of naan today (yesterday the naan was fried bread instead, aye yi yi). I can identify the basmati rice, dal tarka..and naan. There was also an additional lentil dish, and a pureed spinach dish with soft potato pieces. Fill in the blank?
Tonight I used my chickpeas in an adaptation of this soup recipe from Angelica's Home Kitchen I had mentioned last night. I added steamed potatoes and more seasonings. I used less rosemary and left out the bay leaf (I actually have them, but I'm not sure how I feel about them). It ended up being a little too strong on rosemary, but still good. I blended nearly all of it into a puree, but left a small amount of whole potato-chunks and chickpeas. I almost added diced carrots, but decided against it. I also added half a clove of roasted garlic, along with crushed garlic.
My blender held up for this!Post-blending with a swirl of fresh ground pepper.

Dinner: balsamic, olive oil and garlic roasted asparagus and cremini mushrooms
make-shift garlic bread (white was not my choice, but at least it's local and organic)
leftover chickpea-pasta bake


and a cup of soup (I only made through a 1/4 of this..)
I've never frozen soup before, and I hope this does well, as I plan on freezing most of it.

The indian spinach and potato combo is Saag Aloo. My favourite. I had a massive bowl of it with Tarka Dhal and Chapatis for my dinner last night - heaven.

Thank you Kate. It's called Tarka Dal at the eatery, but indeed all the recipes I've seen online are for Tarka Dal. Your dinner sounds delicious.

If you're going to puree soups, you ought to get a hand-held blender (also called immersion blender or blender-on-a-stick). I'm not much of a creamy soups girl, I've discovered, but when I tried them out, this is what worked.

okay, i'm definately gonna try this soup. my poor lil guy seems to have gotten sick more times since starting school than he has in his whole life! i'm trying hard to get more garlic into him!

Kaivegan- I don't think I've ever had mushrooms and asparagus paired together, but it was a wonderful combination. I will make it like this again, and hopefully in a risotto.

Are the Naans really vegan? Most of the naan I know about has ghee in it. Paratha is not quite as tasty, but pretty much always vegan. But, somewhat suprisingly, different restaurants do all use different recipes. I think some might use oil for naan. But it's worth checking if the idea bugs you. :)
