we let him eat cake

The Ginger-Macadamia Nut-Coconut-Carrot cake from Vegan with a Vegenaence. I left out the crystallized ginger, added a pinch of ginger powder and tossed in more macadamia nuts. I used a coconut milk buttercream with more coconut for the filling and frosting. Our old neighbor Nicholas had practically glowed at the photo in the cookbook, and I decided to make this for his last meal over.
