I cooked!

Holy shit! It's been a while, but over the past few weeks, I've managed a few meals at home - or at least throwing things together to dish out at work for lunch. And hit up the farmer's markets, of course.

I made this for a 4th of July vegan potluck: Gluten free Pesto & Roasted Garlic Mac & Cheeze with Green Beans. It was based on the Lower Fat New Farm recipe and I used rice noodles.

Berry Picking! Some friends I went berry picking a couple weeks ago on Sauvie Island, don't mind my crazy messy kitchen table! We picked strawberries, raspberries and blueberries (early). Berry picking is so therapeutic and I look forward to it every summer. Gets me through the warm madness!

Someone is going to recognize this plate! I made dinner at Webly's house last week while I was dogsitting. Roasted potatoes, baked Italian pesto tofu and broccoli and corn with nutritional yeast and garlic. One of the best meals I've had lately (credit the lack of cooking).

The whole living-right-by-a-vegan-deli thing is sweet.

A couple weeks ago I met Hannah from Bittersweet Blog and My Sweet Vegan. She was in town for a book signing (and treat sampling) at Herbivore and to record this segment of Whoopie Pie making on Everyday Dish. We also had the chance to chat at a mini PPK meet up at Townsend Tea's for bubble tea and knitting talk (of which I'm a total newbie). I tried one of her whoopie pies and oh, my.

All that food looks fabulous, but that baked pesto tofu has to be my favorite! It looks totally awesome!

Wow, you HAVE been cooking!! Everything looks terrific; and I'm quite envious of your berry-picking, since I haven't been able to do that here yet (the weather hasn't been suitable for "berry growth" in my garden).

Ahh, so fun that you met Hannah - she's awesome!! And so are her baked goods :0)

omg! i'm sitting here reading your post and eating leftovers and i'm like "damn, this lunch kinda sucks - i want all of jess's food instead!" it all looks gloriously awesome! those berries - and the the farmer's market loot have me all jealousfaced! :)

Great post! I love seeing what people pick up at farmer's markets! That zucchini is gigantic! So envious you got to go berry picking - I would love to do that some time this summer!

That green bean/cheeze casserole looks awesome! My mac & cheeze always dries out when I try to bake it. I have the new Farm cookbook. I should look that up!

Can you believe I just discovered the joys of berry picking this summer?? Now I want to go constantly. It's amazing, truly. And speaking of which, I should probably post about it one of these day...

So glad you are back to cooking! That pesto mac & cheeze looks scrumptious and pretty :) I wish there were places around here to go berry picking. I can definitely see how it would be therapeutic!

Everything looks so good - I love your noochy chickpeas. I am a nooch addict. It is my favorite dressing on earth. i do not know how I lived almost 40 years on this planet without nooch. Dear Goddess, never will it not be part of my life. I am eager to try anything with nooch in it.

And your farmers market haul - whoa! Good stuff.

It seems everyone has been picking berries lately - I don't know if we have them here in Florida like that.

Funny but in the new ish of VegNews they had a thing by Hannah. She's practically famous!

Ahh that reminded me how much I wanted to go pick some strawberries!! Its like going to an all-you-can-eat buffet of fruit (wonder how many vegans they find at the end of the day in their fields, passed out and covered in fruit?)
