Portland is now home to yet another piece of awesomeness - Potato Champion, a Belgian Frites late night food cart.
I'm saving most of my thoughts for the upcoming Stumptown Vegans review, but suffice to say, their fries are really good! I've only been once so far, and I thought I was going to be disappointed, and I absolutely was not. And this is coming from a girl who not only loves fries, but ate a hell of a lot of fantastic frites while studying in the Netherlands near the border of Belgium back in college. Kasteel Well, represent!Thomas and I shared a cone with Rosemary Truffle Ketchup and regular ketchup.
Vegan poutine and mayo dips are apparently in the works!
And some recent meals with little to no oil! The fries are quite an indulgence, people!
Lunch at work - Pomegrante Teriyaki baked tofu, barely steamed asparagus and shredded carrots and salad greens with seasoned rice vinegar.
Dinner last night -Stir fry toss with portabella, kale raab, sundried tomatoes, roasted garlic, garlic and asparagus. Sprinkled with sea salt and pepper. My breath was wonderful.

I just stumbled upon your blog while vegan blog hopping and the first post I saw was about the castle. I am graduating Emerson soon and also went to Kasteel Well last fall (06)! yummy frites!
Claire, that is too neat! I went long ago...well in fall '02. was an RA, to boot. sweet room in the DB. I think that was what it was called...
