Free Vegan Cookies Reminder & Tarts with Webly

Reminder: This Saturday, 2pm - free cookies at Herbivore! Come sample some cookies I'll be making from Veganomican, plus a ton more from other fantastic PDX bakers.

Webly and I made Raspberry Coconut cream tarts on the 4th, based on her coconut pie recipe.
The crust recipe is from the upcoming Veganomican.

I made a few extra crusts, and she made some impromptu apricot-mango yogurt tarts, topped with mango nectarine, kiwi and raspberries.

Webly also helped me create a marinade for this tofu of fresh parsley, basil, rosemary, olive oil, tamari, mustard, agave, pepper, roasted garlic and fresh garlic. The tofu was baked for 20 minutes at 425 with spray oil, then marinaded for an hour, then grilled. Must make this again!

Vegan yum yum grilled corn salsa, with black beans. My favorite yum yum recipe yet!



And the grilling (panning) begins....

Altogether we had: eggplant, zucchini, yellow squash, portabella, garlic scapes, white mushrooms, tofu, tofurkey brats and yves good dogs.
Other than the portabellas, the vegetables were simply brushed with olive oil, garlic, pepper & sea salt.
The whole portabellas were marinaded overnight in red wine, balsamic vinegar, tamari, olive oil and fresh basil.

From last week - random dinner of whole wheat penne, fresh string beans and baby spinach, grilled tofu, portabella and sundried tomato and red wine marinara.

you're making me oh-so-hungry! that tofu(that you made with webly) sounds so good.
i just finished making my cookies for the thing tomorrow. i'm sure it'll be fine but i don't think i did the best. mainly b/c i have this thing with leaving out parts of recipes....like nuts and raisins b/c i have a dislike for them. so half my pumpkin oatmeal have raisins and walnuts, other half look boring as hell.

How do you grill? Do you have a special grill pan or an indoor grill?

Please explain, your grilling always looks so yummy and that is one of the things I miss being veg!!

anonymous - get grilling! I actually have a typhoon cast iron split grill pan. only 13 or 14 bucks, too.

Thanks for your reply regarding the grill pan. Do you find that you need to use a lot of oil with it? What do you usually coat the pan with?

I second the "wow!". It's 2:10 so I suppose you're out dispersing cookies @ Herbivore. Too bad I am fasting this weekend, no cookies for me :( Grilled eggplant is, dare I say without sounding like a poseur, the bomb. And the raspberries. And the tofu. I have to eat "high protein" for a while while I'm doing the amalgam filling removal protocol, so I'm back on tofu and - of course - tempeh. Wait, was there no tempeh in this post? Whaaaat?

I like how this computer does no recognize the word tempeh, it wants me to write temper.

Anonymous - I hope you get to read this - I use a light spray of organic buttery canola (spectrum) or olive oil on my grill pan at the beginning, and more through cooking if needed. Generally, I don't need it unless I'm grilled really dry veggies. I need to get myself a mister bottle!
