I asked Tommy, do you like Cranberry muffins?

Orange Cranberry ‘Buttermilk’ Muffins (adapted from The Food Network)

1 cup fresh cranberries
1/4 cup fresh organic orange juice
1 cup unbleached all-purpose flour
1 cup whole wheat pastry flour
2 teaspoons baking powder
1/4 teaspoon fine sea salt
3 tablespoons canola oil
4 tablespoons softened margarine
1 teaspoon grated organic orange zest
2/3 cup unrefined cane sugar, plus 1 tablespoon for topping, if desired
½ cup plain soy yogurt
¼ teaspoon vanilla
1/2 cup nondairy milk, I used hazelnut milk
½ tablespoon apple cider vinegar

Preheat the oven to 375 degrees F.

Add the apple cider vinegar to the nondairy milk, stir and set aside.

Lightly grease a 12 or 6 muffin tin with canola oil, or use muffin liners.
Sift together the flours, baking soda and sea salt.

Cream the oil, margarine and sugar. Add the vanilla, juice, rind and milk mixture and beat a couple times until incorporated.

Add the flour mixture to the margarine mixture in two batches. Fold in the cranberries. Do not over mix.

Use an ice cream scoop to put the batter evenly into the muffin tins.
Sprinkle the tops with sugar, if desired.

Bake until lightly golden, about 25 minutes.

These are not too sweet and just tart enough. The orange is not overwhelming, like the orange cranberry muffins of bad memories.
Try throwing in some chocolate chips, coconut and/or nuts!

I asked my boyfriend the same thing and the answer was a definitive "no!"

I, however, love cranberry baked goods, so these look quite appealing to me.

Yeah I asked, and he said "do you know what I really like? cranberry orange". I was so excited that I had to get an orange an make them! My boyfriend thinks I'm just a little over the top with the cooking obsession, so..yeah : )

I had a bag of cranberries from Thanksgiving, and they started going wonky, so I figured the were past their prime. I got out some wire and made 15 wreaths (all different sizes) while watching Conan the Barbarian (hah!). I sewed them all to strings that were hanging from a shoe lace and it was going to look so nice on my front door, but enroute to the front door they all got tangled and I ended up just stapling the whole tangled mess to the screen door. Oh well. That's what I get for wasting cranberries.

Hmmm. If the cranberries in my fridge haven't already turned gross, I may just have to make these.

That looks beautiful- you and Tommy have great taste! And your suggestion to add chocolate chips blew my mind: I love cranberry/orange, and I love chocolate/orange, so cranberry/orange/chocolate would probably rock my world!

Yea! I have all the ingredients. We love, love, love orange cranberry here in our house and I love to bake up scones with this mix. Muffins, though, too yummy. I'm definitely trying these. Thank you for sharing.

Looks good so far but I noticed as I was finishing that the instructions never tell you to put in the yogurt. Also it calls for baking powder in the list and baking soda in the instructions. Improvising a little; in the oven now.
