Italian baked tofu, roasted cremini mushrooms and garlic scapes..

While I was on vacation I received exquisite news - my blog was included in Slashfood's Favorite 8 vegan food blogs! I am extremely honored, especially to be on a list that includes Vegan Lunch Box, Dreena Burton, Bryanna Clark Grogan and the gourmet wonder "What the hell does a vegan eat anyway?, among fabulous others" Thanks to everyone who gave me a heads up!

I wish I had more to show tonight to go along with this awesome news, but alas we have a classy pasta dinner:
Roasted garlic scapes and cremini mushrooms with olive oil and sea salt, whole wheat rotini with Muir Glen Fire Roasted tomato sauce and chopped spinach, and a Italian baked tofu cutlet. I came across a page of garlic scape recipes here.
The tofu was simply marinated and baked in Newman's Own Balsamic vinaigrette, Bragg's and chopped organic garlic. I used the VWAV baking instructions - 400F - 20 minutes on one side, and then 10 on the other. I <3>

Secret sauce - to be used this weekend! My weekend plans include bike riding, recipe testing for Catherine ,hopefully getting more fresh berries at the Farmer's Market, maybe some seitan making, researching where to move come late summer, and hopefully using our mini grill at Laurelhurst Park. Let me add MOST importantly, HAPPY 20th BIRTHDAY to my amazing sister, Jennifer! We made VWAV carrot cake cupcakes and coconut cake when I was in town for the occasion~

Good morning primary- yup, I had the oven on - but I don't think it was higher than the mid/upper 60s last night, and our fans really cool down the place, fortuntely.

CONGRATULATIONS JESS!! Much deserved by the way.
Nothing wrong with classy pasta dinner. It's a favorite at our house too.
Crystal and Ryan had those garlic scapes and they really creeped me out. They look like a sea snake in the photos. I really don't think I could eat one. I know they're supposed to be delicious, but I don't know if I could get past the worminess.
I hope you have photos of the cakes somewhere. Would love to see those.

That park looks fun. All the food looks delicious...I've never tried garlic scapes, maybe I can find them at a farmer's market around here.

BTW - Congrats on the top 8. I totally agree with that. A few months back I stumbled onto your blog, Leslie at EatPeacePlease, and Jennifer's Vegan Lunchbox. Your sites and the other blogs I subsequently found were instrumental in making me switch from veg to vegan.

I knew all the reasons why I should be vegan, but had also made excuses or had been afraid I couldn't do it. There is so much great food and the other bloggers are so supportive, it just made the switch seem simple. Sometimes it is harder when you are just 1 lone vegan trying to make it.

I know you may feel like you are posting for you, but others are reading and learning and probably changing just like I did.
