Chock full of food porn goodness!

This looks to be a favorite summer dish - simple garlicky pasta saute with fresh baby spinach, sliced zucchini, halved grape tomatoes and strawberries. I added a bit of red wine vinegar to the leftovers for instant pasta salad - gorgeous & delicious.The majority of photos in this post revolve around Kittee's Oven-Fried Tofu recipe, which I also used to bread chicken style seitan. I marinaded my tofu in light mixture of bragg's and a very, very small amount of agave nectar. I'm not fond of
how toasted sesame oil tastes in a marinade so I left it out. The spices I used were garlic powder, paprika, sea salt, pepper, cayenne pepper, spike and a dash of emeril's seasoning mix. On one batch I used 'normal' sesame seeds and on my second I used black. I highly recommend this recipe! On a sandwich was my favorite way to eat the tofu, and the nuggets are great with ketchup alone. This is a great one to make on Sundays and use throughout the week.

Whole wheat bread, toasted, with oven fried tofu, tomato, cremini mushrooms, field greens, Vegenaise and some ranch dressing. The mushrooms were sauteed in earth balance...


'Muffins that taste like Donuts' from Vegan Vittles. I don't own the book I've simply been interested in making this recipe so I googled it. I found it here and I'm assuming it's the correct version, let me know if it's not~ I liked them alright, but they weren't my type of muffin goodness. I'm not crazy about applesauce infused baked goods, which these have, so maybe that's it.

The following is granola in progress! I'm helping Catherine with some recipe testing for her first cookbook, and this is Honey - Almond Granola - my first time making granola, very easy.

Served with soymilk for this morning's breakfast! I must say, I really enjoy almonds in my granola and I'm looking forward to testing more~

Long post, eh? Seitan making from Vegan with a Vengeance: I used vegetarian chicken broth powder to make this.
Salad with ranch dressing.

Whole wheat ziti with chickpeas, roasted red peppers, asparagus, spinach and nutritional yeast.

Hi Vicki - Awesome, give the pasta a try! It's a great way to use up the strawberries you don't simply want to eat (because maybe you've had them a few too many days and they're less than beautiful).

I was thinking the same. You got a lot more cooking done this weekend than I did.

I got a ton of gardening done and also tried two new recipes.

That tofu recipe and the pasta salad look great. I'll try the tofu soon. The pasta salad will wait until my strawberries are done. Lots of little yellow berries on the plants, so hopefully soon!

That tofu looks awesome! I'm going to add that to my list of ways to try tofu before I write it off completely. :) And even if the muffins didn't wow you, they still look adorable!

So what is the recipe for the ranch dressing?

These photo's are great as usual. What setting do you have on your camera to get the close up so clear?

Jody - I ended up with a lot of free time this weekend and it was fairly cool/rainy out, so I made the most out of it. I'm also going on vacation soon and will probably be in cooking withdrawal, so I'm trying to get ahead I guess.
Definitely try the tofu, it's so easy and good.

vegancore - If not tofu, I could see this working on tempeh as well ; )

The first salad is my favorite of the photos. Oh, the granola is probably tied with that! Everything looks great and I can't believe it was your first granola experience with almonds! Great long post!

I also made granola with almonds this weekend, only I used maple syrup and agave nectar instead of honey.

i think for foodies like us the pictures give us the same (ok, no, not quite same) reaction as porn does for some people. we get very excited about food. and it's a funny name for it.

AmyGeek - *I* really liked the strawberry/tomato/garlic/spinach combo, and I'd seen similar pasta salad recipes - I simply like it warm : )

Kai - The VWAV seitan is splendid & really easy to make - I like mine with a light 'chicken' (aka salty) flavor.
