Midweek Munchies and recent grub

Lately we've been eating: Herb and Onion bread with Almond Gravy from Paradox Cafe, Homemade 'Soul Full' chili based on The Everyday Vegan recipe with my soaked beans which were great, mangoes, ants on a log with golden and assorted raisins (TJ bag), low fat apple raisin sorta crumb muffins, and another favorite from Paradox: corn cake with a side of tofu and veggie sausage. (all vegan!)

Also, recommendations for 2-3 cups of red kidney beans? I plan on making stuffed peppers but want to just use black beans in them..I have black bean ideas but I'm lacking on the kidney beans..I'll make more chili if it comes down to it, or try a beans and rice deal. How long to soaked beans last in the fridge? How do I freeze them properly? Thank you!

Jess, I'm totally intrigued by that photo of the herb and onion bread with almond gravy! Do you buy the gravy at this cafe? Is it normally served over the bread like this? It just sounds so incredible... is the gravy savory, a little spicy/sweet...? Yum!

I assume you could freeze the cooked beans in a single layer on a parchment-lined cookie sheet until they are solid, then transfer them to a container or baggie. Let me know how it goes!

ALSO, what do you think of the Cherry Nirvana? I have some in my freezer . . . it's a little too sweet for me. I love the Mocha Almond Fudge one, though!

Harmonia- Yup, Newman's Brand Medium Peach. I believe it was WholeSoy, I just buy whatever is on sale : ) I think I picked it up at Whole Foods. The Annie's bunnies are okay, but nothing special..I'd like to do a crumb coating out of them..they do have honey though.

Dreena- It is a savoury gravy, great consistency, almond/pepper/golden taste (?) This dish was served at the diner, on their homemade herb and onion bread. I will ask more next time my boyfriend orders it for you!

Catherine- Thank you for the bean advice! Regarding Cherry Nirvana, I can't get over how much I like it. I wasn't quite a cherry lover prior to getting fresh ones at our farmer's markets last year, either. I do like the Mocha one as well, but Cherry Nirvana is remarkably my favorite (not so in love with the cherry pieces though - wierd in soy cream).

Jess -
As to the beans...After my beans are done cooking (I use a crockpot), I drain and rinse them. The ones I am going to be using in the next few days, I put in water and into the fridge. The ones I freeze are drained and then put into freezer zippies. I measure them before I bag them (I ususally do some 1 3/4 to 2 cup bags, and also some 3 1/2 - 4 cup bags b/c those are usually the amounts in typical recipes. When I want to use them, I just dump them into a bowl with some tepid water and let them hang out there till they are ready.
I have only done this with chickpeas so far, but it worked out great. I have some black beans that I cooked and froze, but haven't used those yet.
And I think I figured out why my beans weren't as plump as yours - they were older. Our HFS (in a tiny town in FL) doesn't have as high a turnover as one in Seattle would. I got some chickpeas from the co-op in Arcata, CA when I was there, and those cooked up way better than the ones from here. Yet ANOTHER reason to move out to the NW:)

p.s. Do you have or have you ever used/read Joanne Stepaniak's "The Saucy Vegetarian?" I want that cookbook but would love to hear from someone who has used it.

I have to admit I haven't paid as much attention to the honey issue as most vegan or aspiring vegan do. Although, if I make something at home I always try and use agave nectar and NOT honey but if I am out and find I ate something with honey in it - I usually don't freakout as much as I would if there was dairy. I also still use lip balm with bees wax in it and maybe an occassional candle. Hopefully the diehard vegans reading this don't fault me for being less compassionate when it comes to honey/wax...but perhaps it will be something to work on in the future.

Is the Saucy Vegetarian by Joanne Stepaniak a vegan cookbook or lacto/lacto-ovo? I know Joanne takes care of the vegan forums on Vegsource so I am just wondering.

Caroline & Harmona - sorry gals never tried that cookbook. I've tried a couple recipes from her other book, The Uncheese cookbook, and didn't really like them - and I do like nutritional yeast.
