cookie <3 love & more

Espresso coconut cookie with chocolate ganache and coconut.


Soy Not Oi! peanut butter chocolate chip cookies - this one is chipless and a big dab of raspberry jam placed in a thumb-printed center about 4 minutes before coming out of the oven.
I preferred the jam centered the most, followed by the plain peanut butter cookies. I didn't have arrowroot and subbed cornstarch, and the cookies were wonderful the first night + day after (I had one each time, thank you) but the next evening and today they lost their moistness. Still good, but I'd probably microwave (gasp) one if I wasn't way full from dinner.

I'm working on the adaptation of this coconut cookie recipe. These are decadent yet simple cookies, and I have an idea for next time...so no recipe, folks.


Fried vegan (no butter!) elephant ear with cinnamon sugar and marionberry preserves (too much for me, on top of being way too much as it was). My boyfriend's mom and I got these at the Saturday market yesterday. Never again, I don't care if I'm on vacation technically (half days monday+tuesday this week) I can't and shouldn't handle food like this and do not want to. I threw at least half of it away (mostly berry side).
Peanut noodles from Saturday lunch. I used a bit too much tamari on the veggies and didn't think out the sauce enough, but it's a learning experience, so I'm content.

Um... all I can say (or ask) is if I can pay you and you can supply me of cookies?!? Especially since I haven't baked in months! You're killin' me.
