Asparagus is my hero.

Fresh asparagus, the swiss kitchen knife and my bamboo cutting board..sweet times.



Dinner this evening included mashed potatoes made with earth balance, sea salt, roasted garlic, fresh ground pepper, unsweetened vitasoy original, garlic powder and nutritional yeast. I also had roasted garlic & olive oil asparagus for myself and work tommorow, and my boyfriend and I also shared steamed broccoli and a few baby carrots. The entire bulb of roasted garlic did indeed go into the mashed potatoes (so did most of the skins). I really wanted to grill the asparagus but didn't want to clean the ole foreman - I should wait for local asparagus season soon anyway ( = happiness).

I love asparagus too. It is one vegetable we all love in our family as well. My older girl can eat about 8 spears or more on her own - but not the tips! The tips are the best part, of course, but not for her! :)

I will have to try those potatoes! I love asparagus...just had some last weekend, I believe.

Those stalks look mammoth, though! Yum!

My kids call asparagus "junior" (Junior the Asparagus from Veggie Tales).
It is one of my favorite veggies, too, and like Dreena, one that the whole family will happily eat- but in the winter, I couldn't seem to find good ones. (I've always wonder why WFM don't put theirs in little water)

I too have a love for asparagus from growing up. I couldn't resist picking some up for 1.99/lb from New Seasons Market again, although I am indeed waiting for local season now. I've never tried the frozen variety, I'll hold out for fresh.

Just a question for you about Follow Your Heart Cheese. I bought some and after I got it home, saw that is was a couple of days past the date. I figured it would still be OK, but I didn't want to leave it out any longer than necessary, and I remembered reading on one of your posts about freezing it, so I threw it in the freezer. Once thawed, will it still be nice and melty or does that mess up the consistency?
