Lemon Pepper Rosemary potatoes, inspired by Vive Le Vegan!
I didn't have the recipe, just a picture and general idea, so I used the following:
6 local russet potatoes, cut into small cubes and cooked with the following:
(approximate as these are from memory~)
-Olive Oil
-1 tablespoon or so dried rosemary
-2 tablespoons organic lemon juice
-3/4 teaspoon fresh ground black pepper
-1/2-3/4 teaspoon salt
And those set of eyes belong to my cat Huxley.
