What? No Cheese?


Vegan Alfredo with sundried tomatoes and broccoli, Green bean and yellow zucchini risotto (totally vegan!), a breakfast for dinner consisting of green beans, sliced tomato, biscuit, VWAV white bean tempeh sausage gravy and tempeh sausage crumbles, & more crumbles. I made the crumbles with taco seasoning this weekend as well, and kept the oregano and crushed red pepper from the original recipe, and added smoked paprika - Possibly my new favorite food. I still can't add more than 5 photos - argh!

Vivacious - I adapted the Lowfat Vegan Alfredo recipe from vegweb - I made it a couple years ago and wasn't a fan, but my boyfriend looooved it, so I decided to make it again this year - ha! I basically blended silken Mori Nu tofu, minced garlic, dash Italian herbs, couple spoonfuls of 'parmesan' (ground blached almonds, sea salt + nutritional yeast) and vegetable broth and plain soy milk. After blended, I added it to a saucepan of some earth balance and more minced garlic, and let it simmer. The key is not too much nutritional yeast to keep the light flavor (and I hear nutmeg).
La Dolce Vegan actually has a recipe for silken tofu/sundried tomato/basil sauce that I mean to try..

Johanna - I would vote for unsweetened natural, which I think you can also find dutch processed. The higher quality the better - that being said if you're on a budget, cheaper brands are often animal-product free as well. I buy unsweetened in bulk from the store, and I also like Trader Joe's organic cocoa powder for baking + drinking.

Yum this all looks so good. I'm going to have to try that vegan alfredo sauce real soon. I really do miss creamy pasta sauces from time to time. And I think that we all should have breakfast for dinner more often. Oh so yummy!

Welcome back--I Love vegan alfredo... Selma's favorite food when she was little was homemade vegan mac n cheese-I really should make that more.

Mmmm, fettuccine alfredoooooo. Have you tried the fettuccine alfreda from VwaV? I'd like to take a stab at that. I did make the recipe from La Dolce Vegan you mentioned. It turned out really well and only took 10-15 minutes to make. The recipe calls for broccoli and I've also made it with asparagus. Both work well.
Glad you're settled in and back posting. Blogger was being a pain for a while and I had a really hard time uploading any pictures. Things seem to be OK. For now.

Carrie - I haven't tried that one yet but I've made similar. I don't know if I'm too big on sundried tomatoes and basil together - I made something very similar to the LDV recipe and was 'okay' with it, which was sad.
